Lately it seems my Facebook friends are in a panic because their beloved Pumpkin Spice creamer is missing from the shelves. It seems that these same friends have sought out this fall favorite from the closest mega-coffee shop (read: ridiculously over-priced). Friends I can help!!!! Save your money, after all Christmas is right around the corner and if that doesn't motivate you think of all the cute boots that are calling your name.
This is easy, flexible, cheap AND better for you.
Homemade Pumpkin Spice Creamer
2 cups milk or soymilk
3 TBS canned pure pumpkin
2 TBS sugar (or agave nectar, splenda, truvia to taste)
2 TBS vanilla extract
1/2 tsp pumpkin pie spice
Put first 3 ingredients in a small sauce pan, stir over low heat until all ingredients are well combined. Remove from heat, stir in vanilla and spice. Pour directly into your coffee or let cool completely and store in a container in fridge until ready to use. To make it extra special top with whipped cream and a little more pumpkin pie spice. *adapted from Taste of Home 2009

YUM! I am totally going to make this! And of course I have pumpkin spice on hand. Who doesn't keep that sweet stuff stocked in their spice cabinet?
